I’ve been insanely busy since school is out…I thought this was summer vacation. Apparently, not.
I posted on my TwoGrand this morning about my favorite breakfast, and promised recipes, so I thought I’d best keep my word. Bullet Proof Chai Latte and a Chocolate Chip MIM.
For the chai, I steep one Constant Comment Decaf bag for 5-ish minutes. I just love this tea. It’s a strong brew, with a nice spicy undertone. PERFECT for chai lattes. I brew it right in my blender cup, with 1 packet of Stevia (I use Puyre brand).
Then, I toss in 1/4 tsp of cinnamon and a splash of vanilla and whizz it together. After that, I add 1 tsp each butter, coconut oil and cream, whizz again. The last add in is 1/4 c of Cashew milk. You can use almond of that’s what floats your boat. Welcome to cinnamon spice heaven.
The MIM is originally from this THM blogger, Crafty Antionette. This is my version, my tweaks to an already great recipe.
2 tsps melted butter
Add to that, 1 egg and splash of vanilla (to your taste, start with 1/4 tsp if you need to measure) and whip that together.
Add 2 TBSP oat flour (i ground up some good old fashioned oatmeal) and 1.5 TBSP flax meal (yes, the golden is more fun, but any flax meal is good.), 1/2 tsp of baking powder and a dash of salt. That’s less than 1/8 tsp, people. Beat that all together well. Add in chocolate of choice (I used a chopped up Lily’s chocolate bar).
The oat flour made it nice and fluffy. The oat flour, however, causes it to become a Crossover and not a nifty S. It’s good and filling, no matter how you make it.
And, speaking of making stuff, my Baking Blend** came in the mail today!!!! Looking forward to making some of the yummy recipes I have pinned. Some of them are, in no particular order, Onion Rings, Blue Cornbread, Chicken Fingers, Chocolate Zucchini Cake, and oh, so many more! I only have a pound, though, lol. We’ll see how I like it.
